Check out Microchip's I2C EEPROMs at www.microchip.com Their datasheets are very descriptive on I2C usage and their chips are capable of storing 2000 bytes. If you need INSTANT write capability (note that I2C chips typically require anywhere from 1ms (fast write) to 10ms (normal mode) to store each byte or page of bytes (16 bytes)), then check out www.ramtron.com for their ferroelectric RAM chips.
