Microchip has an application note that might be of help; go to:

and download Application Note AN560 which discusses interfacing to their
93LC56 and 93LC66 EEPROM chips.  They use a bit-banging interface to a
PIC16C54, but the code should be easily adaptable to use the SPI module
in the more advanced PICs.
