You might look at some of the embedded linux forums for more detailed help. For a device like this you might look at one of the many Linux capable powerPC or ARM boards out there. If size/cost isn't as critical, maybe you'd be better off going with an embedded PC and find a PC104 board that has built in LCD drivers (that's probably going to ultimately determine the board you choose.) There are some linux ready devices that you could buy off the shelf if you look around.
