I think that you can do what everyone does: put the pot on an elastic
bracket (tongue) and put a pusbutton with short travel under one end of
the tongue. Expected push force should be less than 500 grams. Probably 50
to 150 grams is right. The data sheets for pushbuttons give the actuating
force and you get to work out the required lever, accounting for the force
in the tongue. The tongue can be mild steel or plastic.
