I am using the later with a 2N7000 p-mosfet (to-92) package and two 47k (I
think) resistors per signal. This is bi-directional and easy.

There are level converter chips.  Look for inverting, or non-inverting
buffers of certain logic families.   SN54LVC07A is one by TI.

Lastly, if you have open collector outputs on both sides, just connect them
directly with a 3V pullup resitstor.

I run the PIC on 5V and I have a LCD module that runs on 3V.  Is there any
level converter IC out there that can translate 3V to 5V?  It would be great
if it can also be bi-directional (5V to 3V as well)
