The way it is usually done mimics european TEXT-TV or closed caption (for NTSC). In europe (PAL) lines 7-22 of the video signal are used. You need a video sync decoder, a PIC and a video mux. Wait for VSync end, count 3/4 hsyncs (odd vs even field), in one line's time (up to hsync) mux to a PIC output and send serial data (synchronous) Usually there are 45 bytes pr line (TEXT-TV) that is 1/3 of a kilobyte pr. frame. Same procedure the other way. The standards should be somewhere on the net. There are nice commercial RS232-video-RS232 available.
