That's like asking "What's the best car to get".  It depends on what you are
trying to do.  For on-board communications between PICs, I prefer IIC.  It
has more of the protocol in hardware than SPI, and I usually need the UART
for something else.  However, IIC has its own set of limitations and
restrictions, and even outright bugs in the Microchip implementation.
