Dave If you're looking for something to get you started with the basics, I suggest "Easy PIC'n" and "PIC'n Up the Pace", both by David Benson. They are available at amazon.com, or through the publisher at http://www.sq-1.com. These books are geared toward the PIC newbie and offer lots of simple assembler examples to get you started.
