Well - Crystal Semi makes some nice SPI stereo DACs and companion SPI to SPDIF convertors. SPDIF can be transmitted either balanced (recommended) or unbalanced (short distances only). That gives you 2 channels on 1 pair of wires. CAT5 cable has 4 pairs in it . . .
