You could use the demo of CCS, www.ccsinfo.com  the help file, the examples,
and use the
board in CCS site. http://ccsinfo.com/wwwboard/

I had the same problem and started with a book: PIC C from Nigel Gardner
www.bluebird-electronics.co.uk
and very good tutorials in general C you can find in web, like:
