Yes, as I mentioned, I just drive at 64kph and press a button to get a
calibration value stored in EEPROM. I am only using the digital speedo
on board the vehicle, so I guess they are reasonably accurate. The
vehicles are brand new. I will have high speed video (1000 fps) to look
at later so the speed can be checked from that as well.

Each interrupt is proportional to distance travelled, it doesn't matter
how fast they occur. Just work out, on average how far the vehicle moves
per interrupt and work from there.
