Consider SigmA Delta conversion  - see Scott Dattalo's site.
Slowish but takes 2 x R, 1 x C per channel and N+1 pins where N is number of
channels implemented (or 2N if you do N conversions simultaneously.)
As accurate as you want it to be (the more accurate it is the slower the
conversion).
