The rotary encoders must be absolute and they are probably a *lot* more expensive than a pot + a PIC, especially since you can easily parallel a lot of pots into the PIC A/D. With the encoders you have to have one for each channel.

Why not just replace the pots with rotary encoders and get rid of all the
analog stuff?
