The problems involved in making a good one are considerable. But on the other hand because of the sizeable market for scales, there are several specialist companies in the buisness. They should be able to sell you a turn-key solution at a competitive price. If you really want to build your own try to build it into the machine so it weighs mostly the product without a lot of dead weight. Then more sensitive straing gauges can be used so the dynamic range is improved. Also it may be possible to change the mechanical arrangement so only one or two strain gauges rather than 4 are needed to measure the weight.
