For the 16C7X, operation with Vdd higher than 6.0V is not recommended. If the PIC is running faster than 4 MHz, Vdd must be between 4.5 and 5.5V. There is an "absolute maximum rating" of 7.5V, but this means only that the Vdd can go up to 7.5V briefly and the PIC won't burn out.
