Hi Geoff, Linear Technology makes a series of 12-Bit Serial I/O Data Acquisition chips which need only 3 connections to the microcontroller. They have 1, 2, 6 or 8 input channels selectable by the serial data link. The thermal drift, linearity and full scale error are within 0.5LSB. They are LTC1291 to LTC1294. You could get away with two of the 6 channel devices.
