You really should investigate AudioLan or A-LAN. There are devices available for interfacing ADCs and DACs directly to this network, which is a ring topology. I don't know too much about it, but it probably is fast enough for one or maybe two 48kHz 16bit stereo feeds, in addition to several control channels at a lower bit rate.
