MPLAB 3.31 I think is very good.  I recently learned PIC on that. 
I suggest you should start with that version. (Or 3.32)
(Now I use 3.40, though I don«t understand the new project system yet...)

This list is to help amateurs and beginners to get started.
Probably lot of people have the same question.
Ansvering a question here once saves effort instead of sending lot of
personal mail.
