It depends on how long you are prepared to wait for the result. The PIC14000 is pretty good but takes a while, as does any integrating type. I haven't given it too much thought, but in reality 8 bits is enough a lot of the time. The other bits get chewed up in applying gain and offset in software. Maybe a mixture of say, a 10 bit ADC and an amp with a couple of digital pots integrated internally. Putting anything analog on the same slab o' glass as a micro isn't giving it a nice start in life.
