A friend with a large auto-racing garage had vibration sensors mounted on the brick wall to detect break-ins. They were commercially available alarm sensors (probably run off 12v dc, dry contact output). There are also commercial glass breakage detectors. Either might suit your needs, and are durable (the vibration sensors were in place for ~8 years before they started to fail). A good alarm supply should have them.
