The data sheets on any of the I2C EEPROMs are very detailed. If you want to use 7 bit addressing, look for, say the 24C01. If you want to use 10 bit addressing, look for the 24C65. I tried to use the built-in I2C module once for master purposes, but found it easier to use my own software routines.
