I was the guy who designed the digital thermometer.  The reason why I used
2N7000s is ...  I had a bunch of them on hand.

Pretty much any Bipolar (with an appropriate resistor at the base) or NMOS
(like the 2N7000) transistor can be used in the circuit.


As for a nice site, you should probably find a good beginner's book in
electronic components, theory, and design.  (There was a thread on this a
month or so ago.)  You might also want to look at some courses at local
community colleges and the like.
