Look for stuff on bioengineering and medical electronics. "Brain waves" are rather tricky; you need silver- silver chloride electrodes, low-noise connections, high gain amplification and lots of filtering. I'd start with something relatively straightforward like heart rate. I did some work on electro-oculography for eye-movement monitoring some years ago, and it was quite difficult. Heart rate monitoring was very easy.
