As long as you are in master mode (as you will be when using IIC EE
memory), it won't matter which PIC you are using. The best solution
is to get hold of the data books on the memory, or even one of the PICs
with hardware slave modules. It is explained in a simple way. If you
understand what you are doing, your software will be more reliable.
