Tim: Call Scott Bartel at Delta-V Rocketry; they make something called the ALTAC, which not only logs acceleration and pressure, but also controls chute deployment. It's designed for high-power rockets, not the little Estes jobs, but it does everything you want and Scott's working on a new version for small rockets. Its data is much more accurate than the other systems on the market, and the PC-based data-analysis software that he bundles with it is excellent. Delta-V Rocketry's at 619 730-3701.
