There is no technical reason why you can't do it with one interface bin and a resistor. There is a simple to use 1 pin device the TMP03 and TMP04 from Analog devices that will be much easier to write code for. I have interfaced it to a Parallax stamp II and the Assembler code will not be that much harder, granted you need to do a 24 bit divide to get full resolution.
