I'm not sure exactly what you're after, but our company, E-LAB Digital
Engineering, Inc. manufactures a board might be well suited to your needs.
It uses the PIC16C57; special low-level driver routines take its two and a
half ports and give you two 8-bit output ports, 1 8-bit input port, 1
fout-bit I/O port, 1 analog to digital input, and a simple plug-in
connection to a text LCD.
All signals are taken both to terminal blocks as well as an interface header.
On-board power regulation and oscillator make the board a delight to use.
The 60+ page instruction manual explains the operation of the board, and two
example programs illustrate its use.
