I believe I saw a TV segment on the designers of the special water
pump technology used in these displays a year or two ago...

The secret wasn't the use of a special pump, it was special piping and
mechanical conditioning of the water flow that smoothes out all eddies,
etc. The idea is to make the water flow 'coherent' by passing it through
thousands of thin longtitudinal tubes. A 'blob' of water stays together
as it passes through the air because all of the water molecules are
travelling along the same vector. Likewise, splashing and divergence are
reduced.

Its a neat effect.
