I am near the end of an art/robotics development (you heard right... my client is an artist who specializes in technological art). I use three 16C57s communicating serially to control the input sensing, processing, and output control functions. The processing PIC is especially interesting. I have implemented a neural net which gives the piece the capability to learn from it's environment and "recognize" previously learned environmental conditions. I am currently struggling with some mechanical construction hurdles (I do bits not bolts) but the PIC stuff works well. Good luck on your project.
