Make Your Own Dinosaur Out of Chicken Bones : Foolproof
Instructions for Budding Paleontologists by Chris McGowan. How can anyone pass up a book like this? Very detailed description on building your own model apatosaurus skeleton from chicken bones. You will gain a much better idea of how dinosaur skeletons worked, and skeletons in general for that matter. Very cool indeed!
T-Rex to Go : Build Your Own from Chicken Bones by Chris McGowan is the sequel to "Make You Own Dinosaur..." and every bit as good. A challenging project, but won't your friends be impressed!
Mr. Wizard's Experiments for Young Scientists
by Don "Mr. Wizard" Herbert is a classic! These are the sort of projects many a kitchen mad scientist cut their teeth on.
I was reluctant to put David MacCaulay's The New Way Things Work in this section, not because it is inappropriate for a younger person (which it isn't), but because the grown-ups will be missing out if they never pick up a copy. A great revision of a now classic book, it explains with enjoyable silliness how some of the common objects we often take for granted actually work. Be sure and check out some of MacCaulay's other works, especially Cathedral : The Story of Its Construction and Castle.

Barron's Science Wizardry for Kids
by Margaret Kenda and Phyllis S. Williams is a great collection of simple science projects on chemistry, physics, and the environment. Tons of projects that will keep you busy for a long time.
